We believe that one of the best ways to enjoy our locally sourced beef is to smoke it Texas style with local cherry and oak chips. We smoke our brisket for 12-14 hours, our ribs for 8-10 hours and the lamb shanks for 4-5 hours. We only season our meat with salt and pepper, as they do in Texas.
